PHOENIX (3TV / CBS 5) – Right in the heart of thriving Roosevelt Row in downtown Phoenix is a one-of-a-kind BBQ area well worth a visit. It is a traditional BBQ spread with spices that bring new flavors and a special experience for every gourmet or “BBQie” looking for new Pitmaster creations. You can find that in the Trapp Haus BBQ, where Pitmaster Phil Johnson aka “Phil the Grill” incorporates various New York influences, spices, dressings and love into his food. Pitmaster Phil Johnson Courtesy: 3TV / CBS 5 “I’ve always loved cooking from an early age. I’ve always cooked, made my own breakfast and food. I was a key kid so I cooked a lot for myself! ”Johnson said with a chuckle. “I just liked Sundays, being with the family, watching football and just throwing a big piece of meat at the smoker, and it just turned into something I enjoyed working with my hands and the finished results to see. ”the hip BBQ place along Roosevelt Row between 3rd and 7th Streets, you know right away that great food and a great atmosphere are in store. Colorful artwork and designs line the walls, reflecting the hip vibe of vibrant Roosevelt Row outside. Johnson and his team cut and dice meat straight from the smoker and grill, delivering fresh and steaming piles of juicy smoked meat to guests. Johnson, also known as “Jay Z of Grilling,” is a veteran of the competitive barbecue circuit and adds an urban influence from his youth in New York City to the meat he cooks today. “What I like to do with my grilling is that I am using many of the ethnic backgrounds I grew up in New York. There were Dominicans, Puerto Ricans, and Jamaicans so there are a lot of different condiments that I use that no one else in the grill world uses and that makes me different. I cook with love and with the ethnic background I grew up with, ”said Johnson. He wanted to see different places and came to Arizona to visit a friend. Johnson says he fell in love with Arizona and the warmth and would rather shovel sunshine than snow. It wasn’t long before he had a BBQ presence in Arizona. The meat and side dishes Johnson serves are the culmination of his passion for cooking, love, and grilling. Courtesy: 3TV / CBS 5 “Barbecue means … it’s a different kind of soul food. I just love to cook with love. So that’s what it means to me. It’s a passion; it’s a ride, ”said Johnson. “Since you’re from New York, a lot of people say that New Yorkers don’t know anything about good barbecue, you have to be from Texas, you have to be from other parts of the world where it’s known for barbecue, but it’s just cooking with Your flavors you’ve grown and things you like to put on the table. ”Jeff’s PicksWhen walking down Roosevelt Row, a pit stop at the Trapp Haus BBQ is well worth it. One of the best restaurants that you will enjoy in this place is Phil’s award winning Philly Crack Wings. Phil smokes them first and then briefly deep-fries them, which gives the wings an excellent crispy crunch and smoky aroma with every bite. Phil’s house spice mix is out of this world on these wings, a must! The ribs come with just the right amount of sauce so that the perfect mix of meat and sauce is created with every bite. The ribs were sweet and savory, with a touch of spiciness at the end of Phil’s spice expertise. Phil’s 12-hour brisket is easy to pull apart and has a combination of seasoning, sauce, and heat that any guest would enjoy. If you’re looking for something truly unique, try Phil’s homemade beef pastrami! It’s juicy, tender and melts in the mouth, a heavenly spicy piece of meat. When it comes to side dishes and starters (or Trappetizer) at Trapp Haus BBQ, you won’t just fall in love with the wings. Phil mixes the Arizona Fusion with his baked beans, my personal favorite among the side dishes. The flavors far exceeded expectations of traditional BBQ baked beans which really sets this site apart. Phil adds his mix of spices, pieces of sausage, green chilies, a touch of salt and smokes the beans, resulting in a standout side. Phil also smokes the Mac n ‘Cheese, another classic site! As someone who has lived in Alabama for over two years, I have to say that the cabbage greens at Trapp Haus BBQ are some of the best I’ve eaten outside of the deep south. The dish has the perfect amount of dressing that will add flavor to the greens but not fill them up too much. Again, Phil’s unique blend of spices gives the dish a wow factor. Even if you’re not a fan of greens, these kale won’t disappoint! The fresh ideas and concepts that Phil brings to his food come from the bottom of his heart. Phil’s love for food and the smiles on his guests’ faces is evident and really shows in the quality of the food he serves. With his mastery of seasoning and homemade sauces, his barbecue has found a home in Arizona and downtown Phoenix. Trapp Haus BBQ goes its own way and brings with it the sense of community, togetherness and the enjoyment of traditional barbecuing in Arizona.
